Super moist Pineapple cake with seasonal pineapples

Pineapples are everywhere! Best of all they are local, sweet and yummy! I am sharing this simple pineapple recipe you can make this weekend or today!

To get to the best pineapples, ripe and juicy! Take one pineapple, smell the bottom of the pineapple, if it smells like a pineapple, then it is ripe. So basically, it needs to have a super strong pineapple scent.

Ingredients 

  • 2cups white sugar 
  • 2eggs
  • 2cups house hold flour 
  • 2teaspoons baking soda or (2 tbsp baking powder 
  • 1teaspoon vanilla essence 
  • 1 whole medium large  pineapple, peeled properly and cut into chunks
  • 1 tsp Cinnamon powder
  • pinch of salt

Method

  1. Beat eggs then add sugar mix well
  2. Add flour and baking soda and blend together add vanilla and crushed pineapple and stir until well mixed.
  3. Pour mixture into greased and floured medium large cake mould or long pan
  4. Cut some extra pineapple rings and put on top of the mixture for garnish
  5. Bake at 175  degrees Celcius  for 40 to 45 minutes.
  6. Cool and frost with your favorite cream cheese frosting or top with whipped topping.
